Chef Rommel’s passion for cooking has evolved into an adventure. His love for cooking tugged at his heartstrings as he was working as a sales trainer in the corporate world. Upon hearing the culinary call, he enrolled at Stratford University, an accredited culinary institute, received a culinary degree and finished top of his class.  You may have seen him at several Intel cafes in the Hillsboro, OR and corporate dining cafes throughout the United States conducting culinary and book signing events or celebrating monthly holidays offering worldly cuisine.

Rommel Mendoza has been in the culinary industry for over fifteen years.  He was an executive chef of a fine dining/sports lounge establishment, operated his own smoothie/deli shop, and owned a small catering business.  During his tenure with his last employer, Chef Rommel was the Vice President of Culinary and Innovation for Thompson Hospitality (the largest minority owned food service company in the United States).  He overlooked the company’s retails brands in the corporate dining world throughout the United States and Canada. His other responsibilities included conducting cooking classes, speaking engagements and chef cooking events.  With the recent challenges our world is experiencing, Chef Rommel’s work life experienced a sudden change. He had to vacate his last position and concentrate on supporting his family the best way he could:  through his talents in food and hospitality.  With this change, something good happened, Chef Rommel launched his own company, Mendoza Food Alliance.  Chef Rommel’s talents are easily seen in the unique brands that make up Mendoza Food Alliance. He offers, Filipino cuisine along with several other brands such as “Pickled Pinoy”, “three brothers jam”, “5 Horsemen Hot Sauce, WORLD JERKY”, and a few other brands that Chef Rommel has created.  His company motto:  “Creating stories with food diversity.” holds true with all the products his company offers; a food story will be created!  Mendoza Food Alliance has been in operation since April 2020.  Chef Rommel is influenced by his Filipino culture, his mother’s cooking, travels while living in Europe, and many traveling adventures in the USA. 

In addition to his achievements in the culinary world, Chef Rommel is the author of Prix Fixe:  Made in the USA by a Filipino; Memoirs and Recipes of the Traveling Chef.  Chef Rommel believes “You are never too old to learn.”  He looks forward to continuing this culinary journey with his family, company and support of many incredible customers.
